Chocolate Raspberry Mousse Pie
Sometimes I crave a sweet treat, but something a little richer than normal. That's where this chocolate mousse pie comes in. The raspberries add just the right amount of flavor to offset the chocolate.

Ingredients
- 1 can (12 fl. oz.) evaporated milk
- 1 cup fresh raspberries, cleaned and dried
- 2 large egg yolks
- 8 oz fresh whipped cream
- 2 cups semi-sweet chocolate morsels
- 1 prepared 9-inch chocolate crumb crust
Directions
- In a medium saucepan, beat together egg yolks and evaporated milk. Heat over medium-low heat and stir constantly until the mixture is hot and thickens slightly (don’t let it boil).
- Remove from heat and add chocolate morsels and stir until melted and smooth.
- Pour the mixture into a bowl and place in the refrigerator until cool.
- Once the mixture has cooled, fold in the whipping cream, saving 1/2 cup for later.
- Put this mixture back in the refrigerator for about two hours.
- Take the chocolate crust and sprinkle raspberries all over the bottom.
- Spoon chilled mousse over the raspberries.
- Dollop the remaining whipped cream on the center of pie and top with a few raspberries.
- Serve and enjoy.
