Ingredients
- 1 can chickpeas, drained and rinsed
- 1 1/2 cups cucumbers, diced
- 1 1/2 cups bell peppers, diced
- 1 cup halved cherry tomatoes
- 1/2 cup kalamata olives, pitted
- 1/2 cup feta cheese
Dressing - 3 tbsp red wine vinegar

1/4 cup olive oil
- Juice from 1/2 of a lemon
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/2 tsp Dijon mustard
- 1/2 tsp garlic powder
Directions
- Drain and rinse chickpeas. Add to a bowl with cucumber, feta, peppers, tomatoes and olives.
- Whisk together all ingredients for dressing.
- Toss salad in dressing and top with feta.
- Enjoy!
Notes
If you want leftovers, only mix dressing on the amount you'll eat today and leave the dressing off leftovers. The salad will keep nicely for at least one day, maybe two if not dressed.
